Hummus
Ingredients
- 2 medium Raw Beets, peeled
- 1½ cups cooked Chickpeas
- ¼ cup Water
- 1 Lemon, juiced
- 2 tbsp Tahini
- 1½ tbsp Olive Oil
- 1 tsp Enerex Radiance Oil
- 2 cloves Garlic
- ½ tsp Salt
OPTIONAL GARNISH
- Sprouts or Microgreens
- Black Seeds or Sesame Seeds
Directions
Step 1
Preheat the oven to 400°F. Cut beets into ½-inch slices and lay on a parchment-lined baking tray. Roast for 40-45 minutes, or until cooked through. Set aside to cool
Step 2
Add all the ingredients to a food processor and blend until smooth. Add more tahini for a creamier consistency. Add more lemon for more zest
Step 3
Plate, and sprinkle on garnish. Store in an airtight container in the fridge for up to 5 days. Nourish, Revive, Thrive!
