Roasted beets add a vibrant, slightly-sweet earthiness to the hummus. Try this simple roasted beet hummus recipe with Radiance Oil for healthy skin. All you need is beets, chickpeas, lemon, tahini, olive oil, garlic and salt.
Ingredients
2 medium Raw Beets, peeled
1½ cups cooked Chickpeas
¼ cup Water
1 Lemon, juiced
2 tbsp Tahini
1½ tbsp Olive Oil
1 tsp Enerex Radiance Oil
2 cloves Garlic
½ tsp Salt
Sprouts or Microgreens
Black Seeds or Sesame Seeds
Optional Garnish
Directions
Preheat the oven to 400°F
Cut beets into ½ inch slices and lay on a parchment-lined baking tray. Roast for 40-45 minutes, or until cooked through. Set aside to cool
Add all the ingredients to a food processor and blend until smooth. Add more tahini for a creamier consistency. Add more lemon for more zest
