Vegan Protein, Mushroom & Greens Breakfast Bowl

Makes 1 serving
1 cup plain vegan coconut yogurt
2 teaspoons Enerex BEST START!
1-2 tablespoons of pure maple syrup
4 tablespoons Mighty Seed Mix (see recipe)
Fresh fruit
-Start by making a quick batch of the Mighty Seed Mix (recipe below)
-In a breakfast bowl, mix together the yogurt, Best Start, and maple syrup until evenly combined
-Garnish with Mighty Seed Mix and fresh fruit
-Have the Best Start to Your Day! 
Mighty Seed Mix
Makes 8 servings
1/4 cup raw shelled pumpkin seeds
2 tablespoons sesame seeds
1 tablespoon fennel seeds
1 tablespoon pure maple syrup
1/4 cup hemp seeds
2 tablespoons chia seeds
Himalayan salt
-Toast pumpkin seeds in a dry medium skillet over medium-low heat, tossing often, until golden, about 2 minutes
-Add sesame and fennel seeds; toast, tossing often, until golden brown, about 2 minutes longer
-Mix in syrup; cook, tossing often, until glossy clumps form, about 1 minute
-Remove from heat; stir in hemp and chia seeds. Season with salt
-Transfer to a parchment-lined baking sheet; let cool
