Vegan Protein, Mushroom & Greens Breakfast Bowl


Yogurt Base

Makes 1 serving

INGREDIENTS
1 cup plain vegan coconut yogurt
2 teaspoons Enerex BEST START!
1-2 tablespoons of pure maple syrup
4 tablespoons Mighty Seed Mix (see recipe)
Fresh fruit

DIRECTIONS

  1. Start by making a quick batch of the Mighty Seed Mix (recipe below)

  2. In a breakfast bowl, mix together the yogurt, Best Start, and maple syrup until evenly combined

  3. Garnish with Mighty Seed Mix and fresh fruit

  4. Have the Best Start to Your Day! 

 

Mighty Seed Mix

Makes 8 servings


INGREDIENTS
1/4 cup raw shelled pumpkin seeds
2 tablespoons sesame seeds
1 tablespoon fennel seeds
1 tablespoon pure maple syrup
1/4 cup hemp seeds
2 tablespoons chia seeds
Himalayan salt

DIRECTIONS

  1. Toast pumpkin seeds in a dry medium skillet over medium-low heat, tossing often, until golden, about 2 minutes

  2. Add sesame and fennel seeds; toast, tossing often, until golden brown, about 2 minutes longer

  3. Mix in syrup; cook, tossing often, until glossy clumps form, about 1 minute

  4. Remove from heat; stir in hemp and chia seeds. Season with salt

  5. Transfer to a parchment-lined baking sheet; let cool
