Matcha & Green Infused Cookies

Makes 12-15 cookies 


1 cup almond flour

1/2 cup coconut flour

1.5 tablespoons matcha powder

1 tablespoon Enerex Greens Original

1 teaspoon baking powder

1/4 cup butter or coconut oil, melted

3/4 cup brown or coconut sugar

1/4 cup maple syrup

1 egg, whisked

2 teaspoons vanilla extract

Optional: white chocolate chips, walnuts, hemp hearts


- Preheat oven to 350F 

- Add melted butter to a mixing bowl and whisk in sugar to cream. Add remaining wet ingredients and mix until smooth

- Combine dry ingredients in a separate mixing bowl. Add wet ingredients to the dry bowl and fold in with a spatula to combine

- Line a baking sheet with parchment paper or alternative and use your hands to form 12-15 cookies, gently flatten and press any additional toppings in to the cookies

- Bake at bake at 350 for 15 min until edges are lightly golden

- Store any leftover cookies in an airtight container
