BE VIBRANT SALAD

Makes 3-4 Servings

WHAT YOU NEED:
1 cup fresh parsley
1/2 cup fresh mint leaves
Pinch of Himalayan salt
4 small cooked beets (chopped)
1 cup cooked chickpeas or kidney beans (1 can)
1/2 cucumber, diced
1/4 cup hemp hearts
2 tablespoons olive oil or hemp oil
1/2-1 tsp Enerex Black Seed Oil
2 tablespoons fresh lemon juice or apple cider vinegar
1 clove garlic, pressed


WHAT TO DO:
-Finely chop the herbs and add to a bowl with salt, mix to combine
-Add cooked beets, chickpeas, cucumber, hemp hearts
-In a small bowl mix the oils, acid, and garlic. Drizzle an mix everything to combine
-Lasts for 3-4 days in the fridge
 
NOTES
-Tips for beans: Eden brand canned beans uses Kombu seaweed which adds trace minerals but also eases digestion of legumes by breaking down oligosaccharides. If cooking dry chickpeas, also a strip of kombu - your digestive system will thank you.
